I love apple pie. There is nothing more comforting than a warm slice straight from the oven and the scent of apple pie baking in the air is to die for. Lucky for me my roomie, as she always does, failed to eat the gigantic bag of red apples she had bought at the store a few weeks ago. She was about to toss them but luckily asked me if I wanted them before she did. Of course I said yes! Apples that are about to go bad make the best apple pie because they are on the brink of peak sweetness.
~Blend 3 cups flour of choice, 3/4 cups of applesauce, 1tsp of salt and 1/2 cup milk of choice
~Press dough into bottom of greased pie dish and sprinkle with cinnamon sugar
~Bake at 375 degrees F for 15 minutes
For the filling:
~In a medium sized sauce pan cook down 1 cup brown sugar, 1 cup milk of choice, 1 T of butter, 1/2 cup applesauce, 1 T of cinnamon and 1 tsp corn starch (cook until boiling then remove from heat)
~Slice apples of choice and arrange in bottom of pie crust and fill dish with filling
~Bake pie for 40-45 minutes at 350 degrees F
