Peanut Butter Chickpea Cupcakes w/ Chocolate Cream Cheese Frosting  

My roommate and I loooooove chocolate and peanut butter. She absolutely loves my cupcakes so I decided to experiment with chickpeas instead of black beans for my cupcake base and make our favorite flavor combo. It worked! The result was moist, peanut buttery and chocolatey AMAZINGNESS. I adapted them from the recipe I use for my chocolate blackbean cake/cupcakes: Chocolate Peanut Butter Cupcakes. My substitutions included 1 can of chickpeas drained and rinsed and 2T of creamy peanut butter in place of the cocoa powder (no peanut butter cup in the middle as well). Super simple 😊  
The frosting is one of the best cream cheese frostings I have had the pleasure of making/eating. Recipe can be found here: My Favorite Chocolate Cream Cheese Frosting. Once cooled I piped on the frosting and sprinkled the tops with crushed chocolate pieces. YUM 💜

    These look great Kasi! Nice job. I will have to give these a try. I have not experimented with chick peas yet. I have used garbanzo and fava bean flour. I want to venture out of the usual gluten-free flours. Thanks for sharing.

      What’s great is this isn’t a “flour”, it is can of chickpeas drained and leaves you with the moistest cake you could ever dream of! I definitely encourage experimenting with them and others for that matter 😊 I am so glad you are enjoying my posts. Let me know how things turn out.

        I love your creativity and thinking outside the box (flour box included!). At first I struggled with gluten-free until I realized I can tackle it and enjoy it. Makes gluten seem boring to me now! We are a gluten- free family. No turning back! Keep up the good recipes!
